I would’ve never thought hard boiled egg and avocado could be so good together. I don’t really know why I was surprised by this combination, but it is a great combination, definitely good enough to have two days in a row.

Ingredients:

  • 1 avocado, peeled and seeded
  • 2 hard boiled eggs
  • 1 tsp dijon mustard
  • salt and pepper to taste

Directions:

  1. Combine all ingredients in a small bowl. Mix together with a fork to break up the pieces. Stir and combine well. Eat as is or top bread to make an avocado egg salad sandwich, yummm. Enjoy!
