This is a family favorite recipe that my mother used to make all the time when I was growing up. It is so simple and so delicious. It makes for a great appetizer or even as a topper for Italian pasta dishes.
Ingredients:
6 roma tomatoes, chopped
1 cup basil leaves or 1/2 cup minced basil leaves
1 Tbsp minced garlic
3 Tbsp olive oil
1 Tbsp balsamic vinegar
garlic salt to taste
Parmesan cheese, grated (optional)
1 large baguette, sliced and toasted
Directions:
- Place the chopped tomatoes in a medium sized bowl. Add the basil and garlic to the tomatoes and mix around. Add the olive oil, balsamic vinegar, and a dash of garlic salt. Combine all ingredients so that they are all equally spread throughout. Refrigerate and let flavors meld for at least one hour or until ready to serve.
- When ready to eat, top toasted sliced bread pieces with Bruschetta mixture and a sprinkle of Parmesan cheese. Enjoy!
