I have a plethora of old bananas in the freezer that I really need to use up. So I decided to make more muffins, just a little different this time since I had eggs at my disposal.

Ingredients:
2 cups all-purpose flour
1/3 cup sugar
2 tbsp cocoa powder
1 tbsp baking powder
1 cup mashed bananas (about 3 medium sized bananas)
2/3 cup unsweetened apple sauce
1 egg, beaten
1 cup semi-sweet chocolate chips

Directions:

  1. In a large bowl combine the flour, sugar, cocoa powder and baking powder
  2. In another bowl, blend the bananas, apple sauce and egg together. Add to dry ingredients, mixing just until blended. Fold in the chocolate chips. Spoon the batter into a greased muffin pan, filling three-fourths full
  3. Bake in a preheated 425 degree F(220 degrees C) for 15 to 20 minutes. Remove the muffins to a wire rack to cool completely. Enjoy!
