I am currently addicted to cinnamon rolls. I made these as Nick’s welcome back breakfast when he returned from Japan, since then I have been obsessed. This is a great recipe my great friend Megan shared with me, the baking queen. You should check out her blog MeganInMoshi, about her experiences living and teaching in Tanzania.

Ingredients:

Dough
1 cup warm milk
2 eggs, room temperature
1/3 cup butter, melted
4 1/2 cups flour
1 tsp salt
1/2 cup white sugar
2 1/2 tsp yeast

FIlling
1/3 cup butter, softened
3/4 cup brown sugar, packed
2 Tbsp cinnamon

Frosting
2 cups powdered sugar
3 Tbsp milk
1/2 t vanilla

Directions:

  1. Dissolve yeast in milk for 10 min. Add eggs, butter, salt, and sugar; combine.
  2. Stir in flour and knead for 5-10 min. Let rise in warm place for 1 hour.
  3. Punch down and roll out into a large rectangle, 16″x21″ or so and about 1/3″ thick. Spread with butter, and cinnamon-sugar mixture.
  4. Roll up, cut into 1″ slices, place in greased pans to rise again. Let rise for 40 minutes in a warm place, or covered in plastic wrap in the refrigerator overnight.
  5. Bake for 15 minutes at
    400, til light brown.

  6. Mix together milk and sugar for icing, drizzle over while warm before serving.
