I am currently addicted to cinnamon rolls. I made these as Nick’s welcome back breakfast when he returned from Japan, since then I have been obsessed. This is a great recipe my great friend Megan shared with me, the baking queen. You should check out her blog MeganInMoshi, about her experiences living and teaching in Tanzania.
Ingredients:
Dough
1 cup warm milk
2 eggs, room temperature
1/3 cup butter, melted
4 1/2 cups flour
1 tsp salt
1/2 cup white sugar
2 1/2 tsp yeast
FIlling
1/3 cup butter, softened
3/4 cup brown sugar, packed
2 Tbsp cinnamon
Frosting
2 cups powdered sugar
3 Tbsp milk
1/2 t vanilla
Directions:
- Dissolve yeast in milk for 10 min. Add eggs, butter, salt, and sugar; combine.
- Stir in flour and knead for 5-10 min. Let rise in warm place for 1 hour.
- Punch down and roll out into a large rectangle, 16″x21″ or so and about 1/3″ thick. Spread with butter, and cinnamon-sugar mixture.
- Roll up, cut into 1″ slices, place in greased pans to rise again. Let rise for 40 minutes in a warm place, or covered in plastic wrap in the refrigerator overnight.
- Bake for 15 minutes at
400, til light brown. - Mix together milk and sugar for icing, drizzle over while warm before serving.
