My friend Megan served this cornbread at her house the other night for our weekly girls night. It was absolutely delicious and even better she made a few adjustments to the original recipe so that it would be a healthier version. It was great and so I couldn’t resist making it again later that week.
Ingredients:
1 cup wheat flour
1 cup yellow cornmeal
1/2 cup brown sugar
1 tsp salt
3 1/2 tsp baking powder
1 egg
1 cup milk
1/3 cup unsweetened apple sauce
Directions:
- Preheat oven to 400 degrees F (200 degrees C). Spray or lightly grease a 9 inch round cake pan.
- In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and apple sauce until well combined. Pour batter into prepared pan.
- Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Serve warm, buttered, and with your favorite honey. Enjoy!
