So there is an obvious fish sandwich trend right now because basically every fast food place is promoting some kind of “fresh” fish sandwich. All these commercials have really made me start craving a good fish sandwich, but I didn’t want a fast food version. So I decided to make my own. This was delicious and it truly satisfied my hunger for a real fish sandwich. All this said, good job fast food marketing, you got me hook line and sinker…kinda 😉

Ingredients:
4 tilapia fillets, about 1 1/2 to 2 pounds
2 Tbsp light mayonnaise
2 tsp honey Dijon mustard or Dijon mustard
1 cup panko bread crumbs
1/2 cup fine dry bread crumbs
1 tsp paprika
1/2 tsp onion powder
1 Tbsp dried parsley flakes
salt and pepper to taste
4 hoagies or buns of your choice
Toppings: sliced tomato, cabbage leaves, red onion, thousand island or tartar sauce

Directions:

  1. Heat oven to 400 degrees F. Lightly grease a large shallow baking dish or spray with nonstick cooking spray.
  2. Combine the mayonnaise and mustard; rub the mixture over the tilapia fillets.
  3. In a food processor, combine the panko and fine bread crumbs, paprika, parsley, pepper, onion powder, and salt. Pulse 4 to 6 times to combine. Pour bread crumb mixture into a wide, shallow bowl. Dip the coated fillets in the mixture, turning to coat both sides.

  4. Arrange the coated fillets in the prepared baking dish. Bake the fish fillets for 15 to 18 minutes, or until fish is cooked through. The time depends on thickness of the fillets. Fish will flake easily with a fork when done. Remove from the oven.
  5. Carefully remove the fillets and place on the hoagies paired with the toppings of your choice. Enjoy!
