My co-worker Candace was talking about how she made ground beef tacos the other night and it inspired me because I haven’t made ground beef tacos for a super long time, and so here we are. So good and great for leftovers all week.

Ingredients:
1 tbsp oil
1 yellow onion, chopped
1 bundle of cilantro leaves, chopped
2 lbs lean ground beef
garlic salt and chili pepper to taste
1/4 cup salsa of your choice
6 corn tortillas, cooked

Optional topping choices:
tomatoes, chopped
red onions, chopped
Pepper Jack cheese, shredded
lettuce, chopped
salsa of your liking
 
Directions:

  1. Heat up the oil in a large saute pan to medium-low heat. Add the onions and cilantro and saute for 5-10 minutes until onions are tender.

  2. Add beef to saute pan and cook until partly browned; stirring it around with the spatula to break up the meat. Sprinkle meat with garlic salt and chili powder, stir. Add salsa to meat and stir around and continue cooking meat until fully cooked.

  3. Top tortillas with meat and remaining taco toppings. Enjoy!
