I was inspired by a recipe I saw in a magazine and came up with this mix, it was quite yummy and quite healthy, one great combination.
Ingredients:
8 cups of water
1 1/2 cup uncooked rotini
1 1/2 pound peeled and deveined shrimp
3 tbsp fresh lemon juice
2 tsp extra virgin olive oil
1/2 tsp. garlic salt
pepper to taste
1 medium tomato, chopped
1/2 bunch of cilantro, finely chopped
1 jalapeno, seeded and chopped
3 green onions, chopped
1 small red onion, chopped
1 cup spinach
1/2 of a large avocado, chopped
Directions:
- Bring water to boil in a large saucepan. Add pasta to pan; cook 5 minutes or until almost tender. Add shrimp; cook 3 minutes or until done. Drain well.
- Combine pasta and shrimp with lemon juice, olive oil, garlic salt, pepper. Mix well so that every noodle and shrimp is coated.
- Add all other ingredients, mix and serve. Enjoy!
