I came across this recipe on Pinterest and found that it belonged to one of my favorite food bloggers, Joelen. I decided to give it a go except I used ground beef because I do not like ground chicken. I thought it turned out absolutely delicious, like one giant meatball but better! I didn’t let mine rest after I removed it from the oven so the slices did not stick together but if you do let it rest a bit, it will help the meat to not fall apart. I served it with spaghetti just like I would with chicken parmigiana.
Ingredients:
1 lb ground beef (ground turkey or chicken may be substituted)
2 egg, beaten
1/4 cup Panko breadcrumbs
1/4 cup regular breadcrumbs
2 Tbsp of sundried tomatoes, chopped fine
2 tsp Italian seasoning
1-2 cloves garlic, finely minced
1 small onion, grated
1/2 tsp garlic salt
1/4 tsp ground black pepper
1/2 cup Parmesan cheese, grated
1/2 cup pasta sauce (homemade or store bought)
1/2 cup Italian cheese blend, shredded
minced parsley for garnish
Directions:
- Preheat the oven to 350 degrees F. Lightly grease a loaf pan with cooking spray, set aside.
- In a large bowl, combine the ground beef, eggs, breadcrumbs, sundried tomatoes, Italian seasoning, garlic, onion, salt, pepper and Parmesan cheese, try not to over handle the mixture otherwise it will get tough. Place the mixture in the greased loaf pan and form into a loaf. Top the meatloaf with pasta sauce.
- Place filled loaf pan on a baking sheet and bake in the preheated oven for 40-45 minutes. Remove the meatloaf from the oven and sprinkle the top with the remaining shredded cheese. Place the meatloaf back in the oven and bake until the cheese is melted and browned a little.
- Remove the meatloaf from the oven and allow to rest for 5-10 minutes before serving/slicing. Garnish with parsley if desired. Enjoy!
