It was my brothers 28th Birthday last weekend and so I decided I would make him one of his most favorite cakes, The Motherload Cake from Claim Jumper. I found this recipe online but I cut the recipe in half so that I would have three layers instead of 6. Although the cake was delicious, it didn’t quite have that Motherload taste, it may be because I didn’t make the Motherload Frosting, but either way it was a great chocolatey cake that my brother and everyone else enjoyed. Ingredients:
3 eggs
1 1/2 cups sugar
3 Tbsp butter (softened)
1 1/2 cups vegetable oil
3/4 cup unsweetened cocoa powder
3/4 cup buttermilk
1 1/2 tsp vanilla extract
3 1/2 cups flour
2 1/4 tsp baking powder
2 1/4 tsp baking soda
1/2 tsp salt
1 1/2 cups boiling water
1 1/2 cups chocolate chips
Directions:
- Add first seven ingredients (eggs, sugar, butter, vegetable oil, cocoa powder, buttermilk, and vanilla) into a mixing bowl, mixing well in between each ingredient.
- Sift flour, baking powder, baking soda, and salt. Then add to mixing bowl.
- Fold the boiling water into the ingredients in the mixing bowl. Mix well.
- Grease and flour three 8″ round baking pans. Pour batter equally into each of the pans. Add 1/2 cup chocolate chips into each pan.
- Bake at 350 degrees F for 25 minutes. Let cakes cool for 10 minutes on a rack, then remove from pans.
- When completely cool, ice with chocolate frosting. Coat with nuts if desired.
- Cake will keep for 3 days if covered and chill. Serve at room temperature. Enjoy!
