I wanted to make something extreme for the holidays and so I came up with the idea to create this all peppermint surprise. My friend Megan once made this crazy dessert that had a layer of cookie dough, then a layer of Oreos, topped with a layer of brownies. It was absolutely amazing so when I decided to make something peppermint for the holiday season, I decided to create a version of that other dessert. This was so good and yet so intense that all you need is one square to satisfy your sweet tooth.

Ingredients:

For the cookie dough:
Chocolate Peppermint Andes Cookies
2 1/4 cups all-purpose flour
1/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup (2 sticks) butter, softened
3/4 cup sugar
3/4 cup light brown sugar
2 tsp peppermint extract or creme de menthe liqueur
2 eggs
1 cup of semi-sweet chocolate chips
2 cups of “ANDES Peppermint Crunch” baking chips

For the brownie batter:
Brownies
1/2 cup butter
1 cup white sugar
2 eggs
2 tsp peppermint extract or creme de menthe liqueur
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 tsp salt
1/4 tsp baking powder
1 cup of “ANDES Peppermint Crunch” baking chips

1 package of “Candy Cane Joe-Joe’s” or Mint Oreos
1 cup of “ANDES Peppermint Crunch” baking chips and/or 1 cup of crushed peppermint candy cane pieces.

 Directions:

  1. Heat oven to 350 degrees F.
  2. For cookie dough: Stir together flour, cocoa, baking soda and salt, set aside. Beat butter, granulated sugar, brown sugar and peppermint in large bowl on medium speed until creamy. Add eggs; beat well. Gradually add flour mixture, beating until well blended. Stir in chocolate chips and Andes chips. Set aside.
  3. For brownie batter: In a large microwaveable bowl, melt butter. Remove from microwave, and stir in sugar, eggs, and vanilla. Beat in cocoa, 1/2 cup flour, salt, and baking powder. Stir in Andes chips. Set aside.

  4. Assembly: Use a greased 9 by 13 pan. First layer, add the cookie dough to the pan and spread out in pan to make a solid layer in the pan about 1/2 inch deep. Next, top the cookie dough layer with a layer of Joe-Joe’s/Oreos. Final layer, pour the brownie batter over the Oreos to create a solid layer of brownie batter. Top off with sprinkles of Andes chips or peppermint pieces. Bake at 350 for 45 minutes or until toothpick inserted in the center comes out clean.


  5. Cut and serve warm with ice cream or alone. Enjoy!
