Happy Super Bowl Day!

Besides Thanksgiving and Christmas, Super Bowl is a foodies paradise. I have always loved Super Bowl and not for the reason most people love it, I love the food and I love watching the commercials. Every year I look forward to Super Bowl and making something that usually I wouldn’t get away with making due to their goodness (fattiness). This year I created lots of good things but this was by far my most favorite concoction this year. All the goodness of a slice of pizza in a lovely bite sized muffin. Plus they are incredibly easy to make.

Ingredients:
3/4 cup flour
3/4 tsp baking powder
1 Tbsp Italian seasoning
pinch of garlic salt
pinch of red pepper flakes (optional)
3/4 cup whole milk
1 egg, lightly beaten
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 cup cubed pepperoni
1/2 cup store-bought pizza sauce

Directions:

  1. Preheat the oven to 375 degrees F. Grease a 24-cup mini-muffin pan.
  2. In a large bowl, whisk together the flour, baking powder, Italian seasoning, salt and red pepper flakes; whisk in the milk and egg. Stir in the mozzarella, Parmesan and pepperoni; let stand for 10 minutes.

  3. Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.

  4. Meanwhile, microwave the pizza sauce until warmed through. Serve the puffs with the pizza sauce for dipping. Enjoy!
